This is one of my ‘healthy comfort food’ choices. It’s so easy to make, and pretty cheap too.

Ingredients

3 good sized portions of beans

  • 2 tbsp of either olive oil, butter, or coconut oil for frying
  • 1 large onion, finely chopped
  • 2 gloves of garlic, crushed
  • 400g tin of haricot beans (butter beans are a nice alternative)
  • 400g tin of tomatoes
  • 2-3 tsp paprika
  • 2 tsp ground cumin
  • 1/2 tsp chilli powder
  • 1 tbsp tomato puree
  • salt and pepper
  • 250g spinach (optional)

Potatoes or sweet potatoes for your chips

Method

  1. Fry your onions until soft
  2. Add the spices and fry for about a minute
  3. Add the drained beans, the tomatoes, and the tomato puree
  4. Bring to the boil and then let in simmer for about 10 minutes
  5. Add salt and pepper to taste
  6. If adding spinach, do this at the end just before serving

 

  1. Chop your potatoes up into chips, I like thin chips, but fat chips are nice too
  2. Put in a bowl, grind salt and pepper over, and then drizzle over a generous amount of olive oil, make sure all the chips are covered
  3. Put on a baking tray, and put in a hot over for 20 minutes (200C)
  4. After 20 minutes give the chips a shake and turn them over – this helps gets them crispy all over
  5. Put back in the oven for 10 minutes and then they should be ready
